Vegetable Soup

This vegetable soup which can be loaded with any vegetable is a delicious, hearty meal. It can include chicken breast or be completely vegan.
The best part is that it’s really easy to make!
This recipe makes enough for six servings, so it’s perfect for a family dinner or for taking to work for lunch.
I learned this recipe from my mom its one of my favorites growing up. I love how hearty and filling it is, but also how healthy it is. This soup is packed with vitamins and nutrients from all of the different vegetables. It’s a great way to get your kids to eat their veggies too!
The Benefits of Vegetables
There are so many benefits to vegetables. They are low in calories and fat, but high in fiber. They also contain vitamins and minerals that our bodies need to function properly.

Cauliflower has a lot of health benefits, it’s a good source of fiber and antioxidants. it’s a low-carb alternative to grains and legumes.
Potatoes are another great ingredient in this soup. They’re a good source of potassium, vitamin C, and fiber. They also contain a type of starch that can help to regulate blood sugar levels.
Carrots are rich in beta-carotene, a type of antioxidant that helps to protect cells from damage. They’re also a good source of fiber and vitamin C.
Sweet potato is highly nutritious it promotes gut health has been said it may Have Cancer-fighting properties, and they’re a good source of vitamins C and A. Sweet potatoes deliver a third of your need for manganese, a mineral that helps produce collagen and promote skin and bone health.

The vegetables are interchangeable in this recipe, so use whatever you have on hand. If you don’t like cauliflower, you could use broccoli or green beans. Potatoes can be replaced with sweet potatoes or squash or throw those into the pot with the potatoes.
Use your favorite pasta shape in this soup, I like to use letter pasta or elbow noodles. My son who despises vegetables, how I get him to have a bowl I mash it up in my ninja and I get it into him without a fight and he has no idea! I’ll eventually tell him the truth but for now, he’s getting his veggies and I’m happy.
Tips:
- I leave the onion whole in this recipe, as it cooks it will soften and break apart in the soup.
- While the chorizo is cooking with the chicken, pierce the chorizo with a fork to release the juices into the water.
- I love Knorr’s I add them into my soups regardless if I use the meat or not I just love how the seasons taste.
- Knorr’s chicken noodle packages have a lot of seasons plus salt I usually don’t season my soup until the end. With Knorr’s, I usually don’t have to.
- And if your little one is like mine you can mince up the soup in a blender or bullet so that they will not know they are eating vegetables.
Ingredients:
- 1 chicken breast with skin and bone in(optional)
- 1/4 head of cauliflower
- 1/2 package of coleslaw mix
- 2 carrots medium-sized
- 1/2 green pepper
- 1/2 red pepper
- 1 onion small to medium
- 1/2 sweet potato medium
- 2-3 yellow potatoes medium cut in half
- 1/2 cup of pasta of your choice
- 1/2 chorizo sweet or spicey (optional)
- Knorr’s chicken noodle package ( if not using real chicken)
Instructions:
- washing and cleaning the chicken breast and chorizo if used
- Wash and peel carrots and cut to your preference. Peel potatoes. Wash and clean all vegetables, cut peppers into strips, take the skin off the onion but leave it whole. Set aside.
- Place a pot of water on the stove and cook chicken breast with carrots along with chorizo if used.
- Last 30 minutes of cooking chicken and chorizo add yellow and sweet potatoes
- when chicken and chorizo are done remove them from the pot leaving only potatoes and carrots then add the vegetables.
- About 30 minutes into cooking the vegetables add pasta
- If you did not add the meat once the water is reboiled add Knorr’s chicken noodle package stir to dissolve the contents.
- Season to taste with salt and pepper if you need to.
- Separate the chicken from the bone and shred it and cut the chorizo into rounds and add it back into the soup.
