Roasted Pepper Feta Frittata

As a working mom, I am always looking for fast and easy meal prep options. This roasted red pepper, spinach, and feta breakfast recipe are one of my favorites because it is so versatile. You can easily customize it to your own taste by using different vegetables or meats. Plus, it’s a great way to start your day with some protein and fiber!

Meal prepping has taken the stress out of cooking for me and has helped me save time. I highly recommend it to anyone who is looking for a way to make their life easier.

Granted I do spend some time organizing and cooking on the weekends, but it is so worth it when I have a healthy and delicious meal waiting for me in the fridge during the week. What can I put in a Frittata?
The great thing about this recipe is that it is so versatile. You can easily add or remove ingredients to make it your own. Here are some ideas:
-Add some diced ham or bacon for extra protein
-Sub out the spinach for kale or Swiss chard
-Use goat cheese instead of feta
-Try different herbs
The possibilities are endless!
How long does the Frittata last in the fridge?
This recipe will last in the fridge for up to three to four days it never last’s that long. When off to the office I place a slice or two in Tupperware and reheat it in the microwave for a quick and easy breakfast.
Tips:
when using meat I like to cook the meat first in a frying pan. Once it’s cooked remove it from the pan and set it aside. Using the same pan I saute my garlic and onion then vegetables. Once all is cooked I add the vegetables to my pie plate then add the chorizo or bacon on top then once that’s done I add my feta.
Ingredients:
- 1 Tbsp cooking oil
- 2 cloves garlic
- 3-4 cups of baby spinach
- 1/2 12oz. jar roasted red peppers
- 1/2 onion
- 2 oz. feta
- Salt and pepper to taste
- 6 large eggs
- 1/4 cup whole milk
- Chorizo or bacon to your preference but optional
Instuctions:
Step 1:
Preheat the oven to 350ºF. and spray one 13″ glass pie plate with a non-stick spray coating.
Step 2:
Mince the garlic and dice the onion to add to the pan, along with the cooking oil if you’re not adding meat. Sauté over medium heat for 1-2 minutes, or just until the garlic and onion are soft and fragrant.
Step 3:
Remove the peppers from the jar and slice them into thin strips. Once the spinach has wilted add the sliced peppers to the skillet and sauté for 1-2 minutes more.
Step 4:
Season the vegetables with salt, and pepper.
Step 5:
Remove from the heat Place all ingredients on the pie plate and crumble the feta over top.
Step 6:
Whisk together the eggs and milk, and season with salt and pepper. Pour the eggs over the vegetables, then transfer the plate into the preheated oven.
Step 7:
Bake the frittata for 20-25 minutes, or until the center is puffed and the top is light golden brown. Slice into pieces and enjoy.
Tip:
- I love Feta so once I’ve added my egg I add a little more feta on top but this is completely up to you.
- Before placing it into a container and storing it in the fridge make sure the Frittata has completely cooled not to create moisture and your frittata will become a soggy mess.
